Our first attempt at making macaroni and cheese from the recipe provided by Eleanor Rockwell of her mother's, Ursula Ingalls Rockwell Hazen.

My aunt Eleanor Rockwell sent me this copy of the recipe that was passed down from her mother.

Mac & Cheese

White Sauce

  • 1/3 cup butter (= 6 tablespoons)
  • 1/3 cup of flour
  • 2 cups of milk
  • 10 oz Kraft Extra Sharp Cheddar (in red package)

Melt butter, stir in flour.
Add milk a little at a time. Cook until thickened.
Add cheese in cubes, stir well.

Add 2 cups of cooked macaroni.
Mix well. Add to a greased casserole dish.

Personal note: I always add bread crumbs to the top, sprinkled on and broiled for the last couple of minutes, just to get a crispy top on it. I can remember her doing that when she made it with me at 11 West Chester Street.

Bake in 350° oven
35 min.
